Holiday Red Velvet Cookies

I am working on my holiday candy baking list and I am always looking for something new to try.  Red Velvet cookies sounded so good, I had to try them and see if they would make the cut.  This is an easy recipe that doesn’t require much time or many ingredients.  A good thing with the cost of food going up so much!

Here is the recipe.

Red Velvet Cookies with White Chocolate Dip

1 Box of Red Velvet Cake Mix

1 Stick of butter

2 Eggs

Vanilla

1 Pkg. of Almond Bark or white chocolate

Pre heat oven to 350 degrees.  Melt butter.  Mix the cake mix, eggs, butter and vanilla together.  Spoon the dough onto cookie sheet.  I used a small cookie scoop.  Bake for 10 to 12 min.  Let cool for 2 minutes and then remove from cookie sheet.

Let cookies cool completely.  Melt the almond bark and dip half a cookie into the bark.  Set cookie on parchment paper to cool.  IMG_3674_edited-1 IMG_3676_edited-1 IMG_3678_edited-1

These cookies turned out great and I will be adding them to my holiday baking list.  Since I was playing with the recipe, I used a little peppermint oil added to the almond bark for part of the cookies, yummy!!
